Banana upside down cake

Today was a cool afternoon so I decided to have a go at a recipe I’ve had bookmarked for months. It is the Donna Hay Banana Upside Down Cake.

The only change I made was that I didn’t have caster sugar, so I substituted for brown sugar.

The cake is absolutely beautiful, it’s dense and sweet and very moorish. Perfect with a nice coffee for afternoon tea.
