Creamy Potato and Leek Bake

This a recipe for a delicious side dish to compliment a hearty winter meal. I make a big batch of this and reheat it over a few different nights, or even have some for lunch the next day. It is delicious.

Ingredients:

1/2 cup of thickened cream

1/2 cup milk

1 tsp minced garlic

2 washed potatoes

1 small sweet potato

1 leek

2 rashers of bacon – diced

1/4 cup grated tasty cheese

 

Method:

Pre heat a fan forced oven to 180 degrees celsius.

Start by greasing a rectangular casserole dish with butter, coconut oil or whatever your preference.

Finely slice the potatoes, sweet potatoes and leeks.

Layer the sweet potato on the bottom of the dish.

Top with a layer of the potatoes.

Top with a layer of sliced leeks.

Top with the layer of bacon.

In a jug or mixing bowl combine 1/2 cup milk,

1/2 cup of thickened cream,

and 1 tsp of minced garlic.

Pour milk and cream mixture over potatoes.

Top with 1/4 cup of grated cheese.

Bake in the oven for approximately 45 minutes or until cheese has browned and sauce has thickened and then serve.
